Microbiological analyses on Petri dishes (total germs (yeasts + bacteria): YPD medium, wild yeasts: YPD + Actidione,  lactic acid bacteria: MRS medium)

Microbiological analyses by filtration(idem), chromatographic Analyses (higher alcohols and esters, vicinal diketones, sugars, organic acids)

Physico-chemical analyses (pH, apparent and primitive extract and alcoholic concentration, density, limiting attenuation, Iso-alpha acids, polyphenols, colouring, turbidity, ageing, CO2, amino-alpha nitrogen

Test of fermentation in EBC column including complete follow-up
